2 lbs Jimmy Dean Sausage
2 eggs slightly beaten
1 1/2 cups Ritz Cracker crumbs (36 crackers)
2 tbsps onion flakes
Combine all & press into ring mold that has been sprayed with Pam. Bake 45-60 minutes at 350 degrees, or till nicely brown on top. Drain well & quickly unmold on serving plate. Serve immediately, freeze & reheat, or serve at room temperature.
BRUNCH: Good sliced and served warm as "fork food" or popped inside hot biscuits with honey or apricot jam.
APPETIZER: Chill, slice thinly & serve as a topping for Ritz crackers.
